Pep up your peppers, mushrooms and courgettes with this easy and tasty vegetable stuffing mix. Paxo Spicy Mediterranean Veggie Fillers help take simple veg to the next level. They're made from a mouth-watering blend of Mediterranean herbs and seasonings along with a boost of chilli to spice things up. They're quick and easy to make – just add 300ml of water, mix well and let the mixture stand for 5 minutes before stuffing your mushrooms or other veggies and then baking. For a little extra decadence, add grated cheese to your stuffed vegetables for the last 5 minutes of cooking time.

Oven cook: From Ambient

1 Pre-heat oven to 220°C, fan oven to 200°C, Gas mark 7.
2 Empty the sachet into a bowl, adding 300ml of boiling water, mixing well.
3 Leave to stand for 5 minutes.
4 Meanwhile, place 6 portobello mushrooms onto a lightly greased baking sheet.
5 Stuff approximately 65g of your Veggie Filler mix into each mushroom.
6 Bake for 25-30 minutes until piping hot.
